Re-Fried Black Beans
One of my goals for this month is to get more fibre into my diet. Not only does eating fibre-rich foods and nutrient dense carbohydrates (think oats, lentils, beans, sweet potato and quinoa) fill you up making you feel fuller for longer - these foods are fantastic at helping to maintain a healthy balance of hormones.
When I think I’m not having enough fibre, this is one of my go-to dishes that I like to snack on - my refried spicy black beans. In fact we even had these beans over the weekend alongside our healthy fajitas, so these beans are also great as a side dish!
Here is how you can make it:
Serves 2
Ingredients:
2 garlic cloves, peeled and grated
1 can of black beans (400g), drained and rinsed
½ can of chopped tomatoes (200g)
2 tsp smoked paprika - I really like La Chinata's
1 tsp ground cumin
1 tsp dried chilli flakes
1 heaped tbsp. of chipotle paste
Juice of ½ lime
Handful of fresh coriander, chopped
Method:
Heat a large, wide-based non-stick pan with a large glug of olive oil over a medium heat
Once hot, add the chopped garlic, black beans, smoked paprika, ground cumin, chilli flakes and cook for 30 seconds or so
Add the chipotle paste and cook for 1 minute
Then add the chopped tomatoes and 100ml cold water to the pan and cook for around 7-8 minutes until the sauce has thickened
Once the sauce has thickened, remove the pan from the heat, squeeze in the juice of the lime and season with salt and pepper.
Serve in a bowl and finish with a sprinkle of the fresh coriander
