Saffron and Cardamom Porridge

I love a good bowl of porridge during the winter months, and I love trying different ways to jazz up this breakfast favourite. One of my favourite ways is spicing up my porridge with saffron and cardamom, giving it a rich, creamy dessert like taste.


Saffron has long been used in traditional medicine around the world, and research suggests that it can help alleviate gastric problems, insulin resistance and heart disease. Cardamom is related to ginger and can be used to ease digestive problems, nausea, constipation and bloating.


So, for a warming, spicy porridge with numerous health benefits, give the recipe below a try!



Serves 1




  • 40g rolled oats

  • 150ml milk - soya, almond or coconut 

  • Pinch, few stands of Saffron

  • 2 cardamom pods

  • 5 choppped pistachios  

  • Sprinkle of ground cinnamon




  1. Place the oats, milk, saffron and cardamom pods in a large pan over medium heat.

  2. Bring to a steady simmer for 5 to 6 minutes, stirring often to give the porridge a creamy consistency.

  3. Once cooked, place the oats into a bowl and top with the chopped pistachios and sprinkle with cinnamon.

  4. If you prefer your porridge sweeter, you can add honey or maple syrup to taste
